Coconut balls ALOT of Coconut BALLS. ha ha ...balls...Oh my gosh I'm a dork

SO  Mike's momma (and my momma Louise, but first she was his), makes the most incredible coconut balls you've ever tasted.  And I'm not big on coconut but these are in the words of Simon Cowell, BLOODY FANTASTIC.  She gave me the recipe, taught me and coached me and so now I make them every year for Mike and his gang at work.  Today my wonderful mom and sisters; Patty and Samantha, helped me roll and dip chocolate candies all day.  They are sooooo awesome.  Thank you my ladies.

Here is the recipe:
2 lbs powdered sugar
2 sticks of butter or margarine
2 cups of coconut
2 cups chopped walnuts
1 can sweetened condensed milk
2 bars of paraffin wax
2 cups of chocolate chips

Chewy Chocolate Cookie Bars (AKA whiteys)

So for my wedding I got a cake pan and in the cake pan there was a recipe for these chewy chocolate cookie bars.  For years and years it sat in my recipe book untouched, unmade.  So when I finally discovered HOW EASY it was it is now an instant hit with my family.  For instance: tonight I have a reception to go to.  I make the cookie bars after already explaining to my hubby that they are not for him.  Out of the oven they come.  In runs Mercedes.  "wow mom, those smell delicious MAY I PLEASE PLEASE PLEASE have one?"  ::insert beautiful batting eyes and pouty lips::  and what do I do...(stay strong AMANDA stay strong)  "do you want one my love?  Of course you can have one!!!  As I am handing her a whitey and a glass of milk.  Can you say sucker?  I can.
  Here is the super easy recipe:  Yes, I have it memorized.
1 box of yellow cake mix
2 eggs
1/3 cup of oil
2 cups of chocolate chips (we like milk chocolate)
Spread in a 9x13 cake pan, bake at 350 Degrees for 20 minutes.

Voila!

Brrrr....okay it's officially cold.  But I would sure like to see some snow!  I ordered it but apparently it's been delayed.  So! What have we been up too?   Well Mike's been working of course.  He's currently morning the loss of his desktop and has had to resort to his laptop for gaming with his brothers.  Poor guy.  But other then that he seems to be in good spirits and riles up the girls every night before bed.
Mercedes is herself.  She's calling herself Princess Ninja Turtle.  he he...it's so cute.  She's super smart and loves loves loves TV.  I've had to put time limits on her and she doesn't like it.  For that I hate cold weather.  She wants to go outside and play soccer but we'd freeze our butts off.
Ashley is all MISCHIEF.  enough said.
And me I've been keeping busy with the usual household chores but I've also been making alot of hairbows and crocheting.  I'm also going to be making coconut balls here for Mike's employees soon and I'm going to try making my own lipgloss.  It sounds weird but I sooooo want to do it.  So I'll have to post how that goes.
Well I'm off to start my day!  Laundry and a shower, then off to field service oh and a reception tonight!!

Lynette

Yesterday I lost a friend who was dear to my heart.  My friend Carol and I would visit her every Tuesday at the nursing home and we'd read and study the bible with her.  It's not easy to lose someone who became a big part of your life.  I know that now.  Lynette was an awesome person.  She was 61.  So why was she in a nursing home?  She had PSP.  A rare form of palsy in her brain that affected her eyesight.  But not her heart.  Lynette is the first person (who I'm not related to) who has told me that I was a good friend to her and she loved me.   She didn't just say it once.  She was always telling me.  I think it was so I wouldn't forget.  I will never forget though. We had some great discussions.  The thing I regret is that I didn't get to go see Lynette last Tuesday.  My mom (aka the best baby sitter in the whole world) was sick.  And something kept telling me to go see Lynette.  But I got to busy and let life get in the way.  I feel sad.  But I know that Lynette is no longer suffering and someday I'll see her again and she won't be sick.  Until then I know she'd want me to get on with my life and quit wallowing.  I suppose I will do that for her.  But for now I just want to be alone.

So.......





"Mom, Mom, Mommy, MOM!! MOMMYY!!!! MOTHER~!!!!!!"  And that is usually the breaking point of my day.  I love my children.  I do.  But at times I'm so tired I could scream.  Poor poor pitiful me...  So in order to keep my sanity I have been doing a bit of photography, crochet and making some bows.  Here are a few pics.  None of the dishcloth and hot pad I crocheted because I gave them to my neighbor.  She is always bringing over treats and she is just so nice!  :) There are still some nice people out there.. and they deserve hand made stuff made by me  :) This is my beautiful niece Brandi about three weeks ago.  She is now the momma of Bentley.  He is adorable and I'll be posting pictures of him as soon as I get over there and do them.   Love, me ;)

still sick

Okay this cold crap I've got going on is getting pretty old.  I can't hear I can't breathe and worst of all I can't smell or taste.  Now I can deal with not hearing.  Not breathing alright. BUT seriously!!  Not being able to smell or taste is the worst.  I eat because my belly grumbles and I fill the tank.  But there was no enjoyment in that yummy chicken sandwich with pickles, avacado, cheese and tomato. :(  No joy.  Because I can't taste or smell my food.  Argh!  Well I would usually about this time of day be downing a pepsi (half for energy and half because I like the way it TASTES!) But what's the point?
